Experience working with pastry, butchery, á la carte, banquet and buffet styles, Strong experience in managing food production for several F&B outlets and a busy banqueting/catering department; Creative and with passion for quality, European and International cuisine background, Full knowledge with HACCP and hygiene guidelines, Strong leader, excellent people management skills, Revenue driven and cost conscious
Successfully coordinates a team of 65 from the kitchen, pastry and stewarding fields, assuring top quality international five star standards Maintains comprehensive product knowledge including ingredients, equipment, suppliers, markets and current trendsHolds responsibility for all food production areas, hygiene and cleanliness, in line with HACCPControls and analyses, on an on-going basis, the level of Sales, Costs, Quality and presentation of food products, Sanitation and Guest satisfactionRegularly revises all menus offerings based on seasonality and sales mix; Monitors local competitorsDevelops training plans and material and with the Training Manager implements training and personal development plans for his team
