At its very core, this Client is about creating a space where people can fall in love with the French provincial experience. Atmosphere, style of service and simplicity are the pillars of everything that they do, with their guests and team, being at the epicentre of all of their decisions.

A homely destination , close to Oxford, with luxuriously comfortable beds, warm hosts and a menu that celebrates the simplicity, yet depth of flavour found in classic, French cuisine. Think Foie Gras, Bourguignon, Sole Meuniere and Tarte Tatin.

Launching soon with 8 bedrooms and 70 covers (plus 70 in the garden), they looking for someone who is a true foodie, ambitious and has the je ne sais quoi that will bring the Fleur de Lys gastronomic ambitions to life.

As Sous Chef, you are the keeper of the kitchen. It’s your job to seek ways to improve the foodie experience, maintain an organised kitchen and create an engaging work environment for everyone involved.

Responsibilities include:


  • Being motivated to collaborate with the Executive Head Chef to develop new menu ideas, create plans that maximise revenue and drive the quality of the guest experience.

  • Deputising in the absence of the Head Chef, ensuring consistency of delivery in their absence.

  • Spot, nurture and develop talent within the existing team.

  • Attract, train and positively influence new members to drive employee retention.

  • Managing the planning and forecasting of stock levels and orders, ensuring compliance to our internal systems.

  • Guarantee that food safety standards are adhered to.

  • Must be able to work on or manage different stations on the line, as well as work with a variety of ingredients, equipment, and processes.

  • A clear and versatile communication style to ensure the whole team consistently works hard for you on delivering the overall vision.

 

What else you should know…


  • If you require 10 Chefs to do a lunch service in the middle of February, then this job is not for you.

This is not a vanity project with an endless budget but a sensible one with its people, food and beverage offering at its heart. It is key to develop a menu based on what their guests want, and LOVE.
