Well the Cheltenham festival has gone swimmingly and a relief Chef from Cardiff has impressed none other than Mr Michel Roux!  Needless to say Tom is buzzing about having worked with him all week and looks like Mr Roux is fairly pleased with his work! Michel offered the following advice to our chef upon taking the picture "Breathe in a bit mate"
